This easy mushroom pasta with herbs & garlic recipe is a simple and healthy-ish dinner perfect for any night of the week. I used dried herbs, lemon, and garlic to give it an incredible burst of flavor. All three ingredients go so well together. For that cheesy flavor, I like to top my pasta with a bit of nutritional yeast.

The first time I made this easy mushroom pasta with herbs & garlic was on a cold winter night in Chicago. I had just gotten home from a long day of work. Currently, I work in a client facing role. Therefore, I spend most of my day speaking with clients and collaborating with other internal teams to ensure we are meeting client expectation.

Now back to this easy mushroom pasta with herbs & pasta recipe.

Like most unplanned dinner nights I wasn’t sure what I was gonna cook for dinner. Who can relate? I was in the mood for something filling but didn’t have much in the fridge. After glancing through the pantry I spotted a box of pasta and decided…pasta is gonna be my dinner tonight. I knew I wanted something comforting and flavorful. Also, when I’m hungry my meal must take less than 30 minutes so I don’t get too hangry. On another note, pasta is great for leftovers. I like to make plenty for lunch the next day.

As I mentioned above, I like to top my pasta with nutritional yeast. If you’re looking for some non-dairy cheesy toppings then continue reading.

Nutritional Yeast vs Vegan Parmesan Cheese

Honestly, both are great options as it just depends on personal preference. I typically use nutritional yeast to top my pasta or chili. Nutritional yeast (deactivated yeast) has a great cheesy nutty flavor and it’s a great cheese substitute. Additionally, nutritional yeast is a great source of vitamin B12. Alternatively, you can use vegan parmesan cheese if you’re missing that non-vegan parmesan cheesy flavor. I like to purchase it but you can make it yourself as well. Easy Mushroom Pasta with Herbs & Garlic

This easy mushroom pasta with herbs & garlic recipe is a simple and healthy-ish dinner perfect for any night of the week. Vegan and oil-free.

Ingredients
  

  • 8 oz pasta of choice
  • 16 oz mushrooms de-stemmed and sliced
  • 3 tbsp dried thyme
  • 2 garlic cloves minced
  • salt and pepper to taste
  • 2 tbsp nutritional yeast add more if you desire
  • 2 tbsp dried basil
  • half fresh lemon

Instructions
 

  • Bring a large pot of water to a boil and cook pasta according to the package instructions.
  • In a large pan, add the mushrooms, garlic and few pinches of salt and pepper. Stir occasionally and cook until mushrooms are soft. About 5 to 7 minutes. 
  • Stir in the cooked pasta along with the dried basil, thyme and the juice of half a lemon. Serve immediately with nutritional yeast on top.
