Homemade Barbeque Seitan Steak

This homemade barbeque seitan steak is great for meat-eaters and non-meat eaters alike. Seitan which comes from wheat gluten mimics the texture of meat so well.

BBQ Seitan Steak

Recently, I took a vegan cooking class at my local Wholefoods and had the best time. I learned so many tips and tricks for cooking. From DIY sauces to how to make homemade barbeque seitan. I didn’t know how easy it is to make seitan at home. After taking the class, I knew I had to make it again for the blog. Some of my favorite ways to use it are on pizza and pasta. Recently, I made rigatoni pasta with seitan and my boyfriend absolutely loved it. I was shocked! He is not vegan and typically does not want to try my food as much. But every now and again he wants to try my vegan dishes. I think it has to do with the aroma of flavors he smells while I’m cooking. Now I have about two vegan dishes he really likes, lol. 

Where can I buy seitan?

For those busy days or when you just don’t feel like preparing something homemade, you can purchase seitan at your local Wholefoods or Target. I’ve seen several different flavors from the brand Upton’s Naturals at the stores I just mentioned. 

How to make homemade barbeque seitan

Add wheat gluten, nutritional yeast, and garlic powder. Mix until well combined. Add ½ cup vegetable broth and tamari (or soy sauce). Mix until all the wheat gluten has been picked up by the liquids. If it isn’t combining well, add 1 Tbsp of vegetable broth at a time until all of the dry ingredients have been picked up. Your dough will be elastic-looking and string-like. This is good!

Knead the dough for 10 minutes or so and shape it into one or two logs. Place logs in a heavy-bottomed pan and cover with broth. Add garlic, onion, and garni bouquet. Let simmer for 30-45 minutes until you get a nice firm texture. 

Allow the seitan to cool in broth so you get a little more infused flavor. Then cut to your liking. You can cube it, slice it, shred it or grind it! Add your favorite BBQ sauce and voila.

What to serve with seitan?

I like bbq seitan as a main dish with roasted veggies and vegan mashed potatoes (new recipe coming soon). Try this recipe with our vegan potato salad and pineapple ginger beer mocktail.

Ingredients
  

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1/2-3/4 cup vegetable broth
  • 1 tbsp tamari or soy sauce
  • 3 cloves garlic crushed
  • 1 small onion diced
  • 2 bay leaves
  • 1 garni bouquet (suggested herb mix – fresh parsley, thyme, rosemary)

Instructions
 

  • Add wheat gluten, nutritional yeast, and garlic powder. Mix until well combined. Add ½ cup vegetable broth and tamari (or soy sauce). Mix until all the wheat gluten has been picked up by the liquids.
  • If it isn’t combining well, add 1 Tbsp of vegetable broth at a time until all of the dry ingredients have been picked up. Your dough will be elastic looking and string-like. This is good!

  • Eat as is or add it to your favorite recipes for a meaty texture.
