Lentil Patties (Herby & Flavorful)

These vegan lentil patties are the best. This vegan lentil burger recipe is loaded with fresh herbs, spices, and lots of flavors. Also, these veggie burgers are loaded with iron, low in calories, and a great source of protein.

My love for lentils is just beyond. I eat lentils throughout the week all the time. I love adding lentils to salads and soups. When I don’t feel like cooking I try to make sure to opt for something healthy-ish. My go-to is lentil soup. When I don’t make homemade detox lentil soup I usually opt for Trader Joe’s or Pret a Manger Morrocan lentil soup. Both taste amazing! Check out the recipe for this lentil burger below.

Are lentils good for you

Lentils are low in calories, and rich in fiber, protein, and iron. They may reduce help to reduce heart disease risk factors. For more info on lentils, and nutrition check out this article by Healthline.

How to make lentil burgers stick together

The flax egg in this recipe works well as an egg replacement. Also, the oat flour helps the patties stick together as well. Alternatively, you can sub the oat flour for rolled oats.

How to make French green lentils

Add the rinsed french green lentils to a large pot. The ratio I use is always 1 cup of lentils to 2.5 cups of water. Next, bring your water to a boil then lower it to a simmer and cook them covered for 20-25 minutes until tender. Drain, salt, and set aside to cool.

What’s in these lentil burgers

  • Lentils: I use green lentils. You can use french green, brown, or red lentils.
  • Flour: All-purpose flour, gluten-free flour, or oat flour.
  • Vegetables: Onion, garlic, carrots.
  • Spices: Garlic powder, smoked paprika, cumin powder, cayenne powder, sea salt.
  • Herbs: I use cilantro in this recipe. Feel free to use parsley or thyme.
  • Flavor boosters: Dijon mustard and lemon juice.
  • Oil: Grapeseed or avocado oil.

How to make vegan lentil patties

  • Make a flax egg: combine 1 tablespoon of ground flax seeds + 3 tablespoons of water in a small container. Set aside for 5 mins to form egg-like consistency, and set it aside. 
  • Pulse the carrots, onions, garlic, and cilantro (sub for parsley) in a food processor for a few seconds and set aside. 
  • Add your processed carrots, onions garlic, cilantro, lentils, and flour to a large mixing bowl. 
  • Next, add sea salt, black pepper, garlic powder, smoked paprika, cumin, cayenne powder, dijon mustard, flax egg, and the juice of half a lemon to the large mixing bowl. Combine all ingredients well. 
  • Cover the lentil mixture and let it sit in the fridge for about 10-20 minutes. This will help the mixture bind together. 
  • Use your hands to form the lentil patties: You may need to add water if too wet or add more flour if too dry until you get a mixture that holds its shape. But isn’t so dry that it’ll crumble.
  • Following that, add oil (or water) to a pan over medium heat and place the lentil veggie burger in the pan (once the oil is hot). 
  • Next, cook for about 3-5 minutes on each side or until browned. Repeat this process until the mixture is used up. 
  • Top with an additional squeeze of lemon juice or zest. Serve with french fries, roasted vegetables, or cauliflower rice. Enjoy!

How to bake lentil patties

  • Follow the instructions above to prepare the lentil mixture and form the patties.
  • Place the patties on a parchment-lined baking sheet and place them in the pre-heated oven at 350 degrees and bake for 15 -20 minutes.

Store these lentil patties

Store them in an airtight container and place them in the fridge for up to 5 days. For the freezer, add them to an airtight container and freeze for up to 2 months.

Ingredients
  

  • 1 cup french green lentils cooked; can sub for lentils of your choice
  • 1/2 cup oat flour can sub for all-purpose or gluten-free flour
  • 1 flax egg combine 1 tbsp ground flax seeds + 3 tbsp water in a small container. Set aside for 5 mins to form egg-like consistency.
  • 1 tbsp grapeseed oil
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 1 carrot chopped
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tbsp cayenne powder optional
  • 1 tbsp ground cumin
  • sea salt to taste
  • 1 tbsp dijon mustard
  • 1 lemon Juiced
  • 1 handful of cilantro can sub for parsley, thyme, or rosemary

Instructions
 

  • Make the lentils according to the package instructions. Once cooked, remove the lentils from the heat and set aside.
  • Make a flax egg and set aside. 
  • Place the carrots, garlic, and cilantro in the food processor and pulse for a few seconds or until the ingredients are finely chopped and set aside. Or, just finely slice the ingredients.
  • In a large mixing bowl add your processed carrots, onions garlic, cilantro, lentils, flour, sea salt, black pepper, garlic powder, smoked paprika, cumin, cayenne powder, dijon mustard, flax egg, and the juice of half a lemon to a large mixing bowl. Combine all ingredients well.
  • Cover the lentil mixture and let it sit in the fridge for about 10-20 minutes. This will help the mixture bind together. 
  • Form the lentil patties using your hands. The mixture should form 6-8 patties. (If too dry add water. If too wet add more flour)
  • Add oil (or water) to a pan over medium heat and place the vegan lentil patties in the pan (once the oil is hot). 
  • Cook about 3-5 minutes on each side or until browned. Repeat this process until the mixture is used up. Squeeze extra lemon juice or zest on top for serving.

  • How to make oat flour: Add rolled oats to a food processor and process until it forms into flour. 
  • How to make french green lentils: Add the rinsed french green lentils to a large pot. The ratio I use is always 1 cup of lentils to 2.5 cups of water. Bring your water to a boil then lower it to a simmer and cook them covered for 20-25 minutes until tender. Drain, salt, and set aside to cool.
