Portobello mushrooms are a fantastic meat substitute. They have a meaty texture and absorb flavors well, making them an excellent ingredient for vegetarian or vegan dishes. Plus, they’re low in calories and high in nutrients such as potassium, copper, and selenium. I make mushroom tacos weekly at home. I love them.

How to make portobello mushroom tacos
- First, clean the mushrooms and remove the stems. Hold the mushroom in one hand and slide the gills out with the tip of a spoon with the other hand. Continue this process until the gills are gone. Do the best you can to clean the mushrooms but mushrooms don’t have to be completely clean.
- Then, in a mixing bowl, whisk together the oil, orange juice, garlic, cayenne pepper, smoked paprika, chili powder, lime juice, and cilantro. Marinate the mushrooms in the mixture for at least 20-30 minutes, making sure to coat them thoroughly.
- While the mushrooms are marinating, prepare the avocado mash and pineapple salsa.
- For the avocado mash, mash two avocados in a mixing bowl and add lime juice and zest, sea salt, and black pepper to taste.
- For the pineapple salsa, chop up half a small pineapple and one jalapeño (seeded), and mix them in a bowl with lime juice and chopped cilantro.
- Once the mushrooms are marinated, heat a skillet over medium-high heat, add the remaining tbsp of oil, and cook the mushrooms for about 5 minutes on each side, or until tender and browned.
- To assemble the tacos, warm up your tortillas, and spread the avocado mash on each one. Then, add the cooked portobello mushrooms and top them with the pineapple salsa. Garnish with extra cilantro and lime wedges.
Mushroom Taco Variations

- Toppings: Top with vegan sour cream, vegan cheese, pico de gallo, guacamole, cashew cream, or chopped tomatoes.
- Beans: Add some protein & fiber by including black beans, chickpeas, or pinto beans.
- Korean-Inspired Mushroom Tacos: Marinate your mushrooms in a mixture of soy sauce, sesame oil, honey, and gochujang (Korean chili paste) for a sweet and spicy flavor.
- Use Veggies: Top with cabbage, lettuce, and pickled vegetables, like carrots and radishes, for added crunch.

Tips for making these mushroom tacos
- Clean your mushrooms thoroughly: Before marinating your mushrooms, be sure to clean them properly. Use a damp cloth or paper towel to wipe off any dirt or debris gently. You can also rinse them under running water, but be sure to pat them dry afterward.
- Marinate your mushrooms for at least 20-30 minutes: To ensure that your mushrooms are flavorful and tender, marinate them for at least 30 minutes before cooking. You can also marinate them overnight in the fridge for even more flavor.
- Use a hot skillet: For the best sear and texture, use a hot skillet to cook your mushrooms. Heat it over medium-high heat before adding the mushrooms.
- Don’t overcrowd the skillet: To prevent your mushrooms from steaming and becoming soggy, make sure not to overcrowd the skillet. Cook them in batches if needed.
- Warm up your tortillas: To make your tacos even more delicious, warm up your tortillas before assembling them. You can do this by heating them in a dry skillet, wrapping them in foil, and heating them in the oven.
- Customize your toppings: Feel free to customize your toppings to your liking! You can add diced tomatoes, sliced radishes, or even some hot sauce for an extra kick.
How to store & re-heat these vegan tacos
Store the cooked mushroom tacos and pineapple salsa separately in airtight containers for up to 5 days in the fridge. Make the avocado mash on the same day you plan to serve the tacos for optimal freshness. Re-heat the tacos in the pan over medium until warm. You can freeze the cooked mushroom tacos for up to 3 months.
