This pineapple ginger beer mocktail recipe is a must-have for summer. With just 5 ingredients you can make yourself summer mocktail in no time. I love the combination of citrus, ginger beer, and pineapple.

  • 1 oz pineapple puree
  • 1 orange juiced
  • 1/2 cup water
  • 1 lime juiced
  • 1 oz ginger beer


Pineapple Puree

  • Pineapple puree: mix frozen pineapple with ½ cup of water in a high-powered blender. The mixture should be thick — strain for less texture or leave as is.

Pineapple Ginger Beer Mocktail Recipe

  • Place ice in a glass cup. Add ⅓ cup pineapple puree and juice of a lime. Stir mixture for 10-15 seconds. Top drink off with ginger beer.
  • Garnish with fresh mint, sliced lime, or sliced orange.


Optional: Grind or crush a few dried hibiscus leaves or any fruit and mix with equal parts salt and sugar. Use lime to wipe the entire lip of the glass and roll in the sugar/salt/hibiscus mixture. 1/2 tsp hibiscus leaves or mint.
Store pineapple puree in the refrigerator for up to one week or freeze in an airtight container for later use. 
Pineapple puree: add 1 tsp of fresh ginger to this mixture for more depth of flavor.
