The Best Vegan Lentil Patties

The best herby lentil patties. Make these vegan lentil burgers and serve with french fries and lemon wedges. Enjoy!!

  • 1 cup green lentils cooked
  • 1/2 cup oat flour add more if needed
  • 1 flax egg 1 tbsp ground flax seeds + 3 tbsp water
  • 1 tbsp grapeseed oil
  • 1/2 onion chopped
  • 2 garlic cloves minced
  • 1 carrot chopped
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tbsp cayenne powder optional
  • 1 tbsp ground cumin
  • sea salt to taste
  • 1 tbsp dijon mustard
  • 1 lemon Juiced
  • water add as needed


  • Add the rinsed green lentils to a small pot. The ratio I use is always 1 cup of lentils to 2 cups of water. Bring your water to a boil then lower to a simmer and cook them covered for 15-20 minutes until lentils have absorbed all the water and the lentils are soft, and almost a mashed consistency. Remove the lentils from the heat and set aside
  • Make a flax egg and set aside. 
  • Add oats to a food processor or blender and blend until oats become a course flour. Set aside. 
  • In a food processor, process the carrots, onions, garlic, cilantro (sub for parsley) and set aside. 
  • In a large mixing bowl add your processed carrots, onions garlic, cilantro, lentils, and oat flour. 
  • Next, add sea salt, black pepper, garlic powder, smoked paprika, cumin, cayenne powder, dijon mustard, and the juice of half a lemon to the large mixing bowl. 
  • After that, add the flax egg to the lentil mixture and combine all ingredients well. 
  • Cover the lentil mixture and let it sit in the fridge for about 10-20 minutes. This will help the mixture bind together. 
  • Form the lentil patties. (You may need to add water or more oat flour until you get a mixture that holds its shape but isn't so dry that it'll crumble.)
  • Add oil (or water) to a pan over medium heat and place the vegan lentil patties in the pan (once the oil is hot). 
  • Cook about 3-5 minutes on each side or until browned. Repeat this process until the mixture is used up. 
  • Serve with french fries, roasted vegetables, or cauliflower rice. Enjoy!
