Make the lentils according to the package instructions. Once cooked, remove the lentils from the heat and set aside.
Make a flax egg and set aside.
Place the carrots, garlic, and cilantro in the food processor and pulse for a few seconds or until the ingredients are finely chopped and set aside. Or, just finely slice the ingredients.
In a large mixing bowl add your processed carrots, onions garlic, cilantro, lentils, flour, sea salt, black pepper, garlic powder, smoked paprika, cumin, cayenne powder, dijon mustard, flax egg, and the juice of half a lemon to a large mixing bowl. Combine all ingredients well.
Cover the lentil mixture and let it sit in the fridge for about 10-20 minutes. This will help the mixture bind together.
Form the lentil patties using your hands. The mixture should form 6-8 patties. (If too dry add water. If too wet add more flour)
Add oil (or water) to a pan over medium heat and place the vegan lentil patties in the pan (once the oil is hot).
Cook about 3-5 minutes on each side or until browned. Repeat this process until the mixture is used up. Squeeze extra lemon juice or zest on top for serving.
