Add your oats to a blender or food processor and blend (or pulse) until your oatmeal forms a coarse flour.
Next, add your oat flour to a small bowl along with cinnamon and non-dairy milk. Combine mixture until it forms a batter.
Hat a large pan over medium-high heat. If your pan isn't non-stick, add a small bit of oil, and when hot, spoon about 1/4 cup of batter onto the pan and let it cook.
Flip when the top of the oat flour pancakes are bubbly or the edge of the pancakes turns golden brown about 2-3 minutes. Cook the other side for another 2-3 minutes.
