Easy Vegan Oatmeal Pancakes

The best 3-ingredient vegan oatmeal (oat flour) pancake recipe. Batch these pancakes for the week and enjoy a healthy breakfast that will keep you full longer.

  • 1 cup steel-cut oats or use rolled oats
  • 1/2 cup non-dairy milk add more if needed
  • 1 tbsp cinnamon


  • Add your oats to a blender or food processor and blend (or pulse) until your oatmeal forms a coarse flour. 
  • Next, add your oat flour to a small bowl along with cinnamon and non-dairy milk. Combine mixture until it forms a batter.
  • Hat a large pan over medium-high heat. If your pan isn't non-stick, add a small bit of oil, and when hot, spoon about 1/4 cup of batter onto the pan and let it cook.
  • Flip when the top of the oat flour pancakes are bubbly or the edge of the pancakes turns golden brown about 2-3 minutes. Cook the other side for another 2-3 minutes. 
  • Top with maple syrup, fruit, or desired toppings, and enjoy.
