23 Easy Vegan Salad Recipes

These easy vegan salad recipes are perfect for any time of year, especially summer. You’ll find a variety of salads including greek, pasta, cobb, potato salad, noodles, macaroni, avocado, quinoa, fruit, vegan Caprese, chickpea, spinach, and kale salads to choose from.

How can I make my salad recipes more interesting 

  • Season every step of the way. I love adding spices and herbs to my salad. Some of the herbs I use are oregano, rosemary, or black pepper.
  • Combine a mixture of cooked and raw ingredients. I love adding roasted vegetables, sautéed onions together, or pickled vegetables to my salads. 
  • Make your salad dressing. Don’t use the same old salad dressing you’ve been eating since childhood. Make pesto dressings or a pickled vinaigrette. 
  • Add nuts or seeds. I love the nutty flavor of hemp seeds in my salads and adding nuts for a nice crunch.
